1、粉质玉米(Flour corn)：颗粒较软，呈马齿形，淀粉含量较胶质玉米高，粉质胚乳细胞大，淀粉粒多为圆形，直链淀粉比重高，蛋白质含量较低，与淀粉粒结合不紧密，结构疏松，呈不透明状；
一般东北烘干玉米大部分是粉质玉米，较易粉碎，切开或咬开断面呈白粉状，对畜类利用率效果明显，乳猪料宜选择粉质玉米，易糊化，适口性较好。
2、胶质玉米(Flint corn)：颗粒较硬光泽好，半马齿状，容重在每升690g/L以上，淀粉含量相对较低点，且支链淀粉比重高，其角质胚乳细胞小，淀粉粒小而呈多角形，淀粉粒间充满蛋白质，因而组织致密，呈半透明状；粗蛋白质含量比粉质玉米高，但多为角蛋白，畜类较难利用；
胶质玉米粒大饱满，较难粉碎，破碎后呈碎粒状，且粒度较均匀，口感差，但核黄素含量较高，适合做禽料，特别是蛋鸡料。
河北，河南，山东等地产的大部分是胶质玉米，产量相对比粉质玉米要高。
