1、粉质玉米(Flour corn):颗粒较软,呈马齿形,淀粉含量较胶质玉米高,粉质胚乳细胞大,淀粉粒多为圆形,直链淀粉比重高,蛋白质含量较低,与淀粉粒结合不紧密,结构疏松,呈不透明状;
一般东北烘干玉米大部分是粉质玉米,较易粉碎,切开或咬开断面呈白粉状,对畜类利用率效果明显,乳猪料宜选择粉质玉米,易糊化,适口性较好。
2、胶质玉米(Flint corn):颗粒较硬光泽好,半马齿状,容重在每升690g/L以上,淀粉含量相对较低点,且支链淀粉比重高,其角质胚乳细胞小,淀粉粒小而呈多角形,淀粉粒间充满蛋白质,因而组织致密,呈半透明状;粗蛋白质含量比粉质玉米高,但多为角蛋白,畜类较难利用;
胶质玉米粒大饱满,较难粉碎,破碎后呈碎粒状,且粒度较均匀,口感差,但核黄素含量较高,适合做禽料,特别是蛋鸡料。
河北,河南,山东等地产的大部分是胶质玉米,产量相对比粉质玉米要高。
